What’s The Secret to this 30 Minute Mini Chicken Pot Pie Recipe?

Stay at home mom, work at home mom, corporate mom, all around busy mom, how do you get dinner on the table? Do you sometimes dread the process even after searching and pinning the easiest recipes you can find on Pinterest? Dreaming of a yummy and easy mini chicken pot pie without all the work? Well here’s my secret: 

Mini Chicken Pot Pies take 30 minutes with a few secret tricks

Rotisserie Chicken! You’re welcome. 

So here’s the deal: Sure I’m a stay at home mom but that does not mean this life is easy. It is hard work contrary to what some believe. I’ve never worked harder in my life and trust me my last corporate job was anything but easy. Sometimes it’s just easier to order takeout or grab an Effortless Meal from Walmart. We picked up the rotisserie chicken meal with came with a side of macaroni salad and the choice of a Coca Cola product. Sprite was our choice as it makes for a nice mocktail (for this nursing mom.) But here is how I take that one to go meal and make magic. Mini pot pies are total magic for this hectic mom life. My tot thinks they are so cute and in her words “Yummy, so good mommy.” And if you know anything about toddlers and the eating battles, making things in mini versions almost always win (that’s another secret of mine.)

Mini Chicken Pot Pie

We enjoy half of the rotisserie chicken for one meal along with the side of mac salad and then we take the other half and make mini chicken pot pies. Dad and I also enjoy Sprite mocktails while the tot enjoys water from her new cups. A little splash of pink in the design goes a long way. That’s all I’m saying. 

Mini Chicken Pot Pie

Prep time is about 10 minutes, cook time is 30-35 minutes and just like that dinner is on the table. You can’t beat that. Well you can if you prep the filling the night before but seriously dinner in less than an hour is a total win. Oh and mini pot pies freeze well and don’t take up much space in your freezer.

Ingredients
  1. 1/2 Rotisserie Chicken
  2. 1 Package refrigerated pie dough
  3. 2 cups frozen mixed vegetables
  4. 1 can cream of chicken soup
  5. 1/2 Cup of milk
  6. 1 tsp dried Italian Seasoning
  7. Splash of worcheshire sauce (optional)
  8. Splash of tabasco sauce (optional)
Instructions
  1. Preheat oven to 400
  2. Use mini pie pans to cut your dough, mold and set aside.
  3. Mix frozen veggies, milk, soup and spices together.
  4. Cut up 1/2 of your frozen rotisserie chicken then add it to the soup mixture.
  5. Spoon mixture into prepared pans.
  6. Cut the top pie crust to just larger than the mini pan with a pizza dough cutter then cover each pie.
  7. Baked for 30 minutes or until tops are golden brown.
Notes
  1. You can also use 1 9 inch pie pan to make one large pot pie.

Such a quick and easy recipe means more time to spend together as a family before the kids head off to bed. I know how important this is for working moms and dad but it means so much for stay at homes moms too because so much of they day can easily be filled with chores, lessons, playtime and just busy. When we sit down to dinner as a family, all other things on the never ending to do list fall out of mine. A quick prep meal means family bonding over games, acting out one (or sometimes 4!) of the tots favorite books and more cuddle time with our 3 month old. Oh and mom and dad time definitely gets a boost because this easy meal also means an easy clean-up.

    Okay, this is the only way I would probably try a pot pie. This one looks yummy and pretty easy.

    Looks delish! I make a similar chicken pot pie for my family. Hubby LOVES it! I have never thought to use Rotisserie chicken before; that would save a lot of time! Thanks for sharing! xx

      Thanks Apryl. Pot pie is so good but sometimes the time needed makes me not want to do it. Rotisserie chicken saves the day with so many recipes. It is perfect for pot pie.
