Sometimes you just want a light no fuss dinner. The solution is simple: breakfast for dinner. Well sort of. Eggs are a staple at the breakfast table however they serve well no matter the time of the day. I love a baked egg dish and today I am sharing my Sausage & Greens Frittata recipe. This recipe can easily be made into a vegetarian dish or made healthier by reducing the amount of cheese or going with all egg whites. It is also easily changed by adding you preferred veggies or meats.Try it out as is or change it up and let me know how it came out.

Ingredients
- 2 teaspoons olive oil
- 1/2 large onion (large dice)
- 8 oz (1 package) baby kale and spinach greens
- 3 large eggs
- 5 large egg whites
- 1 cup shredded smoked Gouda cheese, divided
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 chicken sausage (fully cooked)
- 1/2 cup shredded potato
Instructions
- Preheat oven to 350°.
- Heat olive oil in a large nonstick skillet over medium-high heat. Add onion; cook
- -5 minutes or until fragrant. Add sausage; cook until lightly brown. Add greens in
- parts until wilted.
- In a large bowl, combine eggs, whites, 1/2 cup cheese, salt, and pepper; mix
- well. Add spinach mixture; mix well. Pour mixture into an 8-inch round cake pan
- coated (coat with cooking spray if pan is not non-stick. Sprinkle remaining 1/2 cup
- cheese over frittata. Bake 30 minutes or until eggs are set in center and cheese has melted. Turn oven up to broil. Bake for another 10 minutes or until just browned.
- Cut and serve immediately.
Notes
Serve with wilted baby green salad and red sangria or a fruity red wine such as Jam Jar (South African Shiraz)
