Spicy Grilled Shrimp Guacamole

Tasty Thursday’s is here once again. This week I am sharing a Spicy Grilled Shrimp Guacamole on Moms N Charge. I usually share a dessert related recipe but this week I am combining some of my favorite summer desserts (fruits) with shrimp for an easy appetizer or for some a light summer meal.

Here’s a hint: You grill just about everything in this recipe, which makes it that much better. I had it on top of fried plantains with a Jamaican Red Stripe Beer as an extra special treat for my birthday. Enjoy.

Grilled Shrimp Guacamole

Ingredients

½ lb large shrimp, cleaned and deveined
1 avocado
¼ pineapple,
½ mango,
1/8 red onion, medium sliced
1 firm Roma tomato, large dice
1 chipotle pepper in adobo, seeded and diced small
Juice of ½ lime
Cilantro
Salt, pepper to taste
Olive oil or cooking spray

Instructions
Season shrimp with salt, pepper, Old bay and paprika. Remove tails before or after grilling. Set aside.
Cut avocado in half and remove seed. Slice pineapple and mango into 1 inch thick slices.
Coat indoor or outdoor grill with olive oil or cooking spray. Grill pineapple and mango for 2-3 minutes per side. Grill avocado and onions for 5-7 minutes. Remove from grill and set aside.
Coat grill with olive oil. Grill shrimp for 2 to 3 minutes, per side.
In a large bowl, combine avocado, fruits, onions, tomato, chipotle pepper, shrimp, lime juice and a little of the adobo sauce from the chipotle pepper. Lightly toss with hands. Season with salt and pepper if necessary.
Place 1 -2 spoonfuls of guacamole on each slice of fried plantain. Sprinkle with chopped cilantro.

    I am definitely trying this!! Looks delicious. I love shrimp, I love pineapple and I love guacamole. Can’t get better than this.

      It was really good Adanna. And filling. Served as a light dinner. Wish the avocado showed up more in the pics but that ok. It’s a great reason to make it again besides how good it taste.

      Go for it Vee. It was so yummy. I had to make extra plantains because the Hubs ate the entire first batch on his own. LOL. Let me know how it turns out.
