Pumpkin Apple Fall Salad Recipe

Despite what the current temperatures say, this Friday is the official first day of fall. Now while I was always a summer girl, fall has quickly become my favorite season of the year. The cooler temperatures, fall activities and all the holiday prep gets me excited. In preparation for our annual holiday dinners, I’m working on a few new recipes. Today’s pumpkin apple fall salad recipe is one of them. 

This simple fall salad recipe with homemade lemon honey dressing is not only easy to make, it stores and carries well for a healthy lunch option.  It’s tasty with a bit of a sweet treat with the cranberries, a vitamin booster from the pumpkin and who doesn’t love a crisp fall apple. I love adding walnuts or pecans and grilled chicken breast to make it a dinner salad.

If you happen to go apple picking, make sure to save some of your apples for more than just pies and other treats. Apples are perfect in fresh salad.

Ingredients
  1. 1/4 steamed or roasted pumpkin - cubed
  2. 1 tbsp of dried cranberries
  3. 1/2 apple thinly sliced
  4. 1-2 cups salad greens
  5. Dash of cinnamon
  6. Dressing
  7. 1/8 C olive oil
  8. 2 tsp honey
  9. Juice of half lemon
  10. Zest of 1/4 lemon
  11. 1/8 tsp dried or fresh thyme
  12. Salt and pepper to taste
Instructions
  1. For the Salad
  2. Place salad greens on a salad plate. Top with cubed pumpkin, apple slices and dried cranberries. If using additions, add them as well.
  3. Pour desired amount of dressing on the salad.
Notes
  1. Additions: walnuts, pecans, roasted chicken or shrimp.

For storage, we are loving the Rubbermaid BRILLIANCE snack and salad set. It’s the perfect set for when I am on the go especially since I like to work at the local park when the weather is nice.
