This is it friends! The best eggnog cookies ever. Yes, the best because they are simple and because this mama made them with only the full use of her left hand. If you follow me on IG, you know by now that I lost a “fight” with my KitchenAid Mixer. I still have stitches that need to heal and my finger has to remain straight for at least one more day. So this right-hander is having to make this whole mama/baker/do it all thing work while using my left hand. Heck, I’m typing this with my left hand and the pointer finger on my right hand. 

Anyway back to the cookies…

I thought I owned a hand mixer but in fact what I have is an immersion blender with a whisk attachment. Just no this can not be used to mix up a batch of cookies and I have the mess all over the kitchen to prove it. So a regular whisk and the strength on my non-dominant hand had to do. And it worked! Seriously, you really can’t mess up a drop cookie and today I discovered that the butter and sugar do not have to be all fluffy and light to get a damn good cookie. Thank me now all you non-bakers.

Eggnog Cookies

Ingredients
  1. 1 cup + 2 tbsp of all purpose flour
  2. 1/4 cup granulated sugar
  3. 1/4 cup light brown sugar
  4. 1 egg yolk
  5. 1/2 cup eggnog
  6. 1/8 tsp vanilla extract
  7. 1/8 tsp almond extract
  8. 1/4 tsp salt
  9. 1/4 tsp nutmeg
  10. 1/4 tsp cinnamon
  11. 1 tsp baking powder
  12. 3/4 stick of unsalted butter (6 tbsp)
Instructions
  1. Add flour, baking powder, salt, nutmeg and cinnamon in a bowl. Lightly stir to combine.
  2. In a separate bowl add the softened butter and sugar. Using your fingers, combine that butter and sugar until the mixture looks like a thick paste.
  3. Add egg yolk to the sugar mixture and lightly whisk to combine.
  4. Add the extracts and half of the egg to the sugar mixture and lightly whisk to combine.
  5. Add half the flour mixture and whisk.
  6. Add the remaining eggnog and flour and stir to fully combine.
  7. Using a tablespoon, drop cookies on a parchment lined cookie sheet.
  8. Bake for 15 minutes.
  9. Allow to cool on baking sheet for 5 minutes then transfer to a wire rack.
  10. Top with buttercream frosting and candy cane crumbles if desired.

As you can see my little pastry chef as ready and willing to help out mama. These cookies are soft so be gentle if you decide to frost them. The recipe makes about 15 cookies. My cookie sheet could only hold 12 so I dumped the rest of the batter because I’m done for the day.
