It’s hot out and most days I don’t feel like cooking much less eating anything heavy. I’ve shared before how much I love cucumber and watermelon as a healthy snack, side salad or as a part of breakfast. Today I am sharing an updated recipe to my standard cucumber and watermelon salad. Get ready to enjoy this delicious Cucumber Watermelon Salad with Asiago cheese.
If you search the web, you will find some great recipes for cucumber watermelon salad most of which include feta cheese. Feta cheese is not one of my favorites but I do love cheese so I decided to try one of my favorites in this salad. Bring on the Asiago. Asiago cheese lends a nice tangy and salty flavor to cucumber watermelon salad.
You do know that adding salt to certain fruits brings out the sweetness, right? I usually sprinkle a little cracked sea salt on my watermelon especially if it isn’t the sweetest watermelon in the bunch. The salt perks it right up so Asiago is the perfect edition to my latest so-so watermelon pick. Someone, please share your watermelon picking secrets with me. I’m willing to pay. Ha!
For this salad, I also use baby cucumbers or cukes as I call them along with a tablespoon of white balsamic vinegar and a splash of Tabasco sauce. Trust me all of this works together for the ultimate summer flavor party in your mouth. I like that the cukes don’t require too much cutting plus they always seem to be more crunchy than full-size cucumbers.
Cucumber Watermelon Salad with Asiago Cheese
- 1/2 Medium watermelon
- 2 Mini cucumbers
- 1/2 Cup shaved Asiago Cheese
- 1-2 Tablespoon white balsamic vinegar
- Splash of Tabasco Sauce (optional)
- Cut watermelon in half then slice into 2 inch slices. Remove rind from each slice then cut watermelon into large chunks.
- Cute cucumbers into thick slices.
- Arrange watermelon and cucumber in a salad dish and top with vinegar and a splash of Tabasco sauce.
- Sprinkle Asiago cheese over salad and serve immediately.
