What’s a big city girl to do now that she calls the South home? Embrace the slower pace, the nice weather earlier in the year and enjoy some sun tea or lemonade. Ahhh but in true big city girl fashion, using Country Time Lemonade Starters to speed up the process makes for a relaxed afternoon with a lovely glass of berry lemonade and my big bang shrimp salad.
The South definitely has many perks, the weather being one. At this time of year in NYC, residence are lucky to see a 40-50 degree day but in the South a 70 degree day happens very often. Enjoying lunch or dinner on the deck reminds me of the ever popular sidewalk dining of NYC. I’m getting the best of both worlds. Great weather and moments of NYC nostalgia.
When the weather is warm, a light salad is a perfect afternoon or early evening meal. Sure right now I can gobble a big steak as I am just 5 weeks shy of having a baby but light meals are definitely the way to go. I reserve my sweet tooth for something yummy. Enjoying my berry lemonade with my shrimp slaw salad was the perfect combination of spicy and sweet.
The salad and the berry lemonade took me less than 30 minutes to prepare. Do you know how exciting that is for a tired mom to be who is also chasing around a two year-old? Just know 30 minute meals are major!
Have you ever made fresh lemonade? It is delicious but takes a good amount of time from adding ingredients, getting the right flavor and time to set. Any good fresh lemonade needs some times to set. Obviously Country Time Lemonade is aware of this and that’s what makes the Country TIme Lemonade Starters so good. They are really easy and convenient to make. You just add water, stir and your lemonade is ready to be poured over a glass of ice.
One thing I love is the addition of added fruits to my lemonade. I added raspberries, lemon and lime slices. The lemonade was good on it’s own. The added fruits were a bonus and I love how they absorb the flavors of the actual berry lemonade. Enjoy your glass or in this case your mason jar (that’s how we do in the South) and then eat all the berries left on the bottom. We had a great time with our #PourMoreFun afternoon.
As for the salad, stir fry the shrimp, grab some prepared asian slaw mix, canned baby corn and watercress and whip up a simple sauce. Combine all ingredients, pour in sauce and mix. Serve over open lettuce leaves.
- 16 oz raw shrimp, defrosted
- 1/2 tsp Chinese five spice
- salt and pepper to taste
- 2 bags Asian slaw mix
- 1/2 can baby corn, cut-up
- 1/2 can cut watercress
- Sauce
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 2 tablespoon brown sugar
- 2 teaspoons hot sauce
- 2 teaspoons honey
- Season shrimp with chinese five spice, salt and pepper.
- Cook until shrimp turns pink and shrimp curls. Remove tail shell and set shrimp aside.
- In large bowl combine slaw mix, baby carrots and watercress.
- Combine all ingredients for the sauce in a small bowl and then add to slaw.
- Add cooked shrimp and mix well.
- Serve over open lettuce leaves.

Head to Walmart to pick up your favorite Country Time Lemonade Starter. This time we went with Berry which was so yummy. But I also picked up the classic lemonade and half lemonade/half ice tea starters.

April 7, 2015 at 7:00 PMBig Bang salad looks so, so, so yummy! Yes, I’m a city girl and I miss the warm spring days from my brief Southern living. My kids love lemonade and this city mom don’t have a ton of time so I may have to cheat with this lemonade. That spread looks so yummy I want to come chat on the patio and grub 🙂
