I totally forgot about this Bacon Spinach Dip. I made it Superbowl weekend. I plan to make it again in a healthier version. For now enjoy this dip made with one of my favorite cheese options: Smoked Gouda.
Spinach & Bacon Dip
Ingredients
- 1pd spinach coarsely shopped
- 1 cup mozzarella
- 1/3 cup smoked Gouda
- 4 oz cream cheese
- 1/2 large onion
- 2 garlic cloves
- Salt & pepper
- 1/3 cup heavy cream (or milk)
- 3 slices cooked bacon
- 1 tbsp olive oil plus more for greasing
- Tabasco sauce
Instructions
- Cook bacon until just before crisp
- Heat olive oil in same pan and then cook onions to softened
- Add garlic and cook for another 2 mins
- Add spinach gradually until all wilted
- Remove from pan
- Add milk bring to boil then add cream cheese and wish until melted
- Add 3/4 cup mozzarella and half the Gouda
- When melted add spinach and 2 slices crumbled bacon
- Add pepper to taste and 3 splashes of Tabasco
- Lightly oil baking pan, add spinach bacon mixture
- Top with remaining cheese and crumbled bacon
- Bake 20-25 mins until bubbly and just browned
Notes
Recipe is best once flavors have combined. Prepare the night before or the morning of your event.
