Avocado Peach Pop Cover

A perfect summertime treat for the health conscious or anyone who loves avocados. That’s a right avocado! I have heard good things about avocado treats such as ice cream but I was never willing to give it a try. But after pureeing and freezing avocados and other fruits for Zoë during the early eating and teething days, I decided it was time to try it for myself.

Let’s just say these pops are delicious. I had some plain ginger tea (fresh ginger boiled in water) stored in the fridge. I turned it into simple syrup by adding equal parts sugar. That subtle taste of ginger was a nice surprise. I also went with peaches because I had them and I wanted to amp up the fruit and sweetness factor. This is an excellent combination. Now my mind can’t stop thinking about what’s next for avocado as a summer treat.

Avocado Peach Pops
Frozen avocado treat? Check Peaches mixed in? Check A ginger syrup base? Check We are ready to make some pops.
Ingredients
  • 1 Hass avocado
  • 1 Peach
  • ½ C ginger simple syrup
  • 2 tsp fresh lime juice
  • Pinch of salt
Instructions
  1. Peel, pit and cut up avocado and peach into medium chunks.
  2. In a food processor, combine simple syrup, avocado, peach, limejuice and salt.
  3. Process until smooth and creamy.
  4. Pour into popsicle molds. Cover and insert wooden sticks.
  5. Freeze for 4 to 6 hours.
Notes
Ginger Simple Syrup: [br]½ C water, [br]4 Chunks of ginger, peeled [br]½ raw sugar [br][br]Bring water and ginger to boil. Simmer on low heat for 5-10 minutes. [br]Add sugar and stir until sugar is completed dissolved. [br]Let cool.

    THis sounds so good MJ. I love Avocados and I love ginger. I never thought of putting them together…must try!

      Thanks Vee. I could probably post a recipe every day having to do with ginger. It is on daily rotation. LOL

    I saw ginger and I was sold. These sounds so delicious I would make them now If I could. I need to buy some Popsicle molds. Where did you find yours?

    I tried them but used mango instead of peach (my daughter is allergic to peaches). They were delicious! The only problem I had was getting them out of the Popsicle mold that I used. Ours was a tall skinny so the stick came off without the pop but we solved that problem by running warm water on it for a few seconds. I will make these again, then prep was quick and easy!
