A perfect summertime treat for the health conscious or anyone who loves avocados. That’s a right avocado! I have heard good things about avocado treats such as ice cream but I was never willing to give it a try. But after pureeing and freezing avocados and other fruits for Zoë during the early eating and teething days, I decided it was time to try it for myself.
Let’s just say these pops are delicious. I had some plain ginger tea (fresh ginger boiled in water) stored in the fridge. I turned it into simple syrup by adding equal parts sugar. That subtle taste of ginger was a nice surprise. I also went with peaches because I had them and I wanted to amp up the fruit and sweetness factor. This is an excellent combination. Now my mind can’t stop thinking about what’s next for avocado as a summer treat.
- 1 Hass avocado
- 1 Peach
- ½ C ginger simple syrup
- 2 tsp fresh lime juice
- Pinch of salt
- Peel, pit and cut up avocado and peach into medium chunks.
- In a food processor, combine simple syrup, avocado, peach, limejuice and salt.
- Process until smooth and creamy.
- Pour into popsicle molds. Cover and insert wooden sticks.
- Freeze for 4 to 6 hours.

August 3, 2014 at 10:57 PMI tried them but used mango instead of peach (my daughter is allergic to peaches). They were delicious! The only problem I had was getting them out of the Popsicle mold that I used. Ours was a tall skinny so the stick came off without the pop but we solved that problem by running warm water on it for a few seconds. I will make these again, then prep was quick and easy!
